"Meat in itself is quite easy to prepare, in a plant-based cuisine I have no need to recreate its taste. Vegetables, on the other hand, are a completely different story - extracting the taste from them is an art. In my opinion they are an endless source of inspiration and I can use them not only in the savoury way, but also in desserts."
