"I think it is worth talking about veganism and eating - above all, about conscious eating. We need to think about what we eat and what impact it has on the environment, on our immediate surroundings. Plant-based cuisine has already stirred up a lot, but it's only just starting to take off. I think the joke about a bowl of ice as a showcase vegan chef's dish is now forgotten. Soon, a few fully plant-based options in the menu will be the new norm."
